Shahi Paneer is a rich and creamy Indian dish made with paneer (Indian cottage cheese) cooked in a flavorful gravy. Here's a basic recipe to make Shahi Paneer:


Ingredients:


For the Paneer:



  • 250 grams paneer, cut into cubes

  • 2 tablespoons ghee or oil

  • 1 teaspoon cumin seeds

  • 1 onion, finely chopped

  • 1 green chili, finely chopped (optional)

  • 1 teaspoon ginger-garlic paste

  • 1 cup tomato puree

  • 1/2 cup cashew nuts, soaked in water for 30 minutes

  • 1/4 cup fresh cream

  • Salt to taste

  • 1/2 teaspoon garam masala

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon red chili powder

  • 1/2 teaspoon coriander powder

  • 1/2 teaspoon kasuri methi (dried fenugreek leaves), crushed

  • 1 tablespoon honey or sugar (optional)

  • Fresh coriander leaves for garnishing


Instructions:




  1. Heat ghee or oil in a pan over medium heat. Add cumin seeds and let them crackle.




  2. Add chopped onions and green chili (if using). Sauté until the onions turn golden brown.




  3. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.




  4. Add tomato puree and cook until the oil separates from the masala and it thickens.




  5. In the meantime, drain the soaked cashew nuts and blend them into a smooth paste using a blender or food processor. You can add a little water if needed.




  6. Once the tomato mixture is cooked, add the cashew paste and mix well. Cook for a few minutes until the raw flavor of cashews disappears.




  7. Add salt, garam masala, turmeric powder, red chili powder, and coriander powder. Mix well and cook for another minute.




  8. Add fresh cream and mix until well combined. Adjust the consistency of the gravy by adding water if necessary.




  9. Add paneer cubes and gently mix them into the gravy. Simmer for 2-3 minutes.




  10. Crush kasuri methi between your palms and sprinkle it over the gravy. Add honey or sugar (if using) for a slight sweetness.




  11. Garnish with freshly chopped coriander leaves.




  12. Serve Shahi Paneer hot with naan, roti, or rice.
